Eating Like Kings Day 13- Shrimp and Feta Over Rice



We're not always super frugal. Here's the cost breakdown of our Shrimp and Feta Over Rice with a Fatoosh Salad. It was fabulous- worth every penny! We had enough leftovers of the shrimp rice for two lunches.

Cost Breakdown:

Shrimp- $3.99 (from a B1G1 sale)

Pita Chips- $1.75 per bag from a local restaurant. We used 1/4 of the bag in the salad and ate the rest.

Spices- about .10 cents worth

Classico Pasta sauce (which we used in place of tomatoes) $1.60 (from Big Lots)

onion- .77 cents

1/2 a package of mushrooms (we had them so I added them to the sauce) .74 cents, thanks to a manager markdown!

1 cup rice- about .50 cents

romaine lettuce- 1/2 a head at 1.59 a head- .79 cents

pickles- (which we used in place of cucumbers in the salad. It sounds weird, but is REALLY good- trust me!) .25 cents

feta cheese- (not on sale-*gasp*) $4.79

Dressing- We buy our fatoosh dressing from another local restaurant. We used about .50 cents worth on our salad.

Total: $15.78, or $5.26 a person. I take comfort in the knowledge that it was a very healthy meal, and that still costs less than eating the same meal out.

Looks good! I am addicted to feta, which can be a pricey addiction. Buying a whole chunk in water is a lot cheaper than the pre-crumbled, at least at my grocery store. (and it's not like feta is a chore to crumble anyway.)
