Remember the leftover spinach filing from our enchiladas? We put it in tortillas, added a little extra cheese, and cooked it in the skillet for spinach quesedillas. We added apple slices for a quick and easy meal!

Tortillas: package of 12 was $1.50 on sale- used 3- .38 cents
Filling: leftover, so the cost is already counted
Apples: .22 cents each, so .66 cents
Cheese: 1/4 of a package .41 cents
Total: $1.01, or .34 cents a person
